1-2 tablespoons Olive Oil
Lettuce or Greens
Grilled summer veggies: broccolini, squash, onions (optional)
Shaved Veggies: Radishes, Carrots, Cucumber or beets. Pickled or raw. (optional)
Condiments such as pickled or djon mustard, barbecue sauce, mayo etc.
Slice Halloumi into ½”-thick slabs roughly the width of the buns (think small squares).
Cook halloumi in a tablespoon of oil flipping once and pressing down lightly in the pan until browned and starting to soften and melt, about 2-3 minutes.(Please see note if you want to grill).
For the Pistou Dressing (makes about 1 cup)
Combine all ingredients in a jar or bowl, and shake or whisk to combine. Season to taste with salt. Set aside.
Grill or toast brioche buns
Put halloumi on and topped with dressing, and whatever veggies you would like and lettuce.
To grill Halloumi: Heat a grill, grill pan, or heavy bottomed skillet over high heat. If using a skillet, add a small amount of oil. Add your cheese, and cook for 2-3 minutes per side, or until nicely browned.
