Apple Verjus Spritz (a mocktail)

This non-alcoholic sparkling drink is nicely balanced between the subtle acidity of the verjus and the sweetness of honey or jam. Verjus can vary in tartness, so if you’d like a bit more acidity we like to add a squeeze of lemon juice or apple cider vinegar. The honey simple syrup or jam syrup can be used for other mocktails, but is also great to use for adding sweetness to salad dressings and cups of tea or coffee!
